This one is the #1 most commonly asked question. By default, when you click on a category that has sub-categories, the catalog will display the subcategories at the top, as well as all the products underneath them. If you just want to display the subcategories, forcing your visitor to first click on a subcategory before they see any products, here is what you need to do:
-Go to Catalog Setup in your store admin area
-Next to "Main Categories", choose "Categories" from the drop-down box.
-Click "Update Variables"
